4 HEALTHY AND EASY RECIPES

Happy Wednesday you guys!! I hope that you are having a great week! We have been having a lot of thunderstorms here in Illinois, which means a whole lot of staying indoors. We’ve been trying to keep busy, playing Lego’s and acting as human jungle gym’s for Kaeden. I don’t know if it’s the weather, but one of the things that we have been doing a lot of this week is cooking …  NOM NOM NOM! Some our favorite go to recipes we found on pinterest and we are absolutely obsessed with them so obviously I had to share them! They are sooo easy to make and bonus – super healthy!

Buddha Bowl

Ingredients:

  • 1 can of Chickpeas
  • 1 cup rice
  • 1 avocado
  • 1-2 cups mixed greens
  • 1 red pepper

Chickpea Stew

Ingredients:

  • 1 can of chickpeas
  • 1 can diced tomatoes
  • 1 tomato paste
  • onion
  • green and red pepper
  • garlic

Avocado Toast

Ingredients:

  • toast (we use whole wheat)
  • 1 avocado
  • 1/2 can of chickpeas
  • 1/2 lemon juice
  • cilantro (to taste)
  • cayenne pepper

French Toast

Ingredients:

  • 2 tbsp chickpea flour*
  • 1 tsp ground cinnamon
  • ½ tsp mixed spice (or pumpkin pie spice mix)
  • 120ml / ½ cup milk (or dairy-free milk of choice)
  • 1 tsp vanilla extract
  • A pinch of salt
  • 1 tbsp vegan butter or mild-flavoured oil
  • 4 thick slices of soft bread
